Raw Material Reality: "Elderberry" Is Not One Ingredient

Elderberry can show up at the loading dock as juice concentrate, puree, spray-dried powder, standardized extract, or freeze-dried fruit powder. These are not interchangeable. Moisture, sugar profile, organic acid load, pH, and anthocyanin content all shift depending on the form.

The pH Problem: Pectin Sets in a Very Narrow Window

Most quality elderberry gummies rely on high-methoxyl pectin. It gives a clean bite, good clarity, and a tender texture. But high-methoxyl pectin only sets properly in a tight pH range-usually around 3.2 to 3.6-and it needs high soluble solids, typically 65 to 78°Brix.

Elderberry extract is acidic. Depending on the form and dose, it can push the finished gummy below that window. If the pH drops too early during processing, pectin pre-gels in the kettle and you get lumps, uneven deposits, or a stalled pump. If the pH runs too high, the gummy never fully sets and turns sticky or runny.

The fix isn't just dumping in more acid or more buffer. It's designing a buffering system that keeps the finished product in the right pH range after the elderberry extract is fully incorporated.

A citric acid/sodium citrate buffer is our usual starting point. The exact ratio depends on the elderberry raw material, the pectin type, and the target final pH. We add the acid buffer late in the process, after cooking and after the pectin is fully hydrated. That avoids shock gelation and gives us a predictable set.

A finished elderberry gummy often lands at pH 3.2 to 3.6, which is great for pectin set but can mute the red hue a brand expects from raw elderberry juice. Color adjustment is usually needed.

Heat is another enemy. Keeping anthocyanins above roughly 60°C for too long causes browning and dullness. That's why elderberry extract should be added after the cooked base cools, not boiled with the sugar mass.

Metal ions are an overlooked factor too. Iron or copper in water or equipment can complex with anthocyanins, shifting color and speeding oxidation. We run purified water and evaluate every contact surface for metal reactivity.

Water Activity and Mold Risk in Fruit-Based Gummies

Elderberry juice or puree brings water, fermentable sugars, and nutrients. That's a welcome mat for mold and yeast if water activity isn't controlled.

The general target for gummies is water activity at or below 0.65. In practice, many stable elderberry gummies land between 0.55 and 0.62.

Getting there means juggling soluble solids, humectants, and moisture. Push soluble solids too high, and sucrose crystallizes, leaving a grainy texture or weeping. Glucose syrup helps prevent crystallization, but the ratio has to be recalculated when elderberry juice adds its own sugars.

Every batch gets a water activity check, and we run accelerated stability samples to confirm the number holds over time.

Polyphenol-Protein Interactions: Why Gelatin and Elderberry Can Clash

Some gummy systems use gelatin instead of pectin. Gelatin is more forgiving during processing, but elderberry polyphenols can interact with proteins. That interaction can cause haze, sediment, astringency, and texture changes over time.

That doesn't mean gelatin is off the table. It means the formula has to account for those interactions. In many cases, a pectin-based system is the better match for elderberry because pectin needs the same acidic pH range that helps anthocyanin color stay stable.
