To deliberately create a gummy that’s crumbly rather than chewy, you essentially disrupt that network. Formulation Levers for a Crumbly Texture
Chewiness in a traditional gummy arises from high-bloom gelatin (typically 200-250 Bloom) combined with substantial amounts of glucose syrup or corn syrup. These syrups act as humectants and plasticizers, trapping water and adding flexibility. To flip that to a crumbly short texture, we adjust three primary components:

Process Choices That Drive the Difference
The manufacturing steps you tweak are just as important as the recipe:
- Starch molding and long drying cycles. Depositing the slurry into dry starch molds and allowing up to 48-72 hours in low-humidity drying rooms drives moisture out of the gel. For a crumbly result, you’ll extend this stage until the piece reaches a water activity below about 0.55, at which point the texture is no longer cohesive.
- High-acid incorporation. Adding acid (like citric or malic) after cooking, at a controlled point, promotes rapid gelation and can over-set a pectin gel, contributing to a short, crumbly snap. The pH must be carefully managed-too low and the gel becomes grainy and brittle.
- Cool, rapid setting. Quick cooling without a slow, tenderizing conditioning step locks in a more crystalline structure, especially when using sugar-based bulking agents. This can border on the texture of a compressed dextrose tablet if the cooling is abrupt enough.
Bordering on Other Candy Categories
When you push a gummy into crumbly territory, you start blurring the lines with several adjacent confections. A high-pectin, low-syrup, low-moisture piece essentially becomes a fruit pâté de fruit-firm, sugary, and sliceable, but with a clean break rather than a chew. If you reduce gelatin drastically and use a large proportion of finely milled sugar alcohols or starch, the product can behave more like a compressed tablet or a lozenge that disintegrates under light pressure. Increasing starch content up to 5-10% (as in some European starch jellies) yields a soft, short texture that’s almost like a Turkish delight. And if you aerate the mass while decreasing humectants, you get a crumbly, melt-away mouthfeel reminiscent of a marshmallow that’s been dried to a crisp.
