If the target is a completely clear, plant-based gummy, I would build the formula around a high-methoxyl pectin primary system, supported by a small amount of low-acyl gellan gum to sharpen clarity and improve gel structure without adding opacity. Pectin gives the gummy body and clean flavor release; low-acyl gellan is one of the clearest plant-based gelling agents available, but it becomes brittle if used too heavily, so it works best as a co-gelling agent at low inclusion.
If the desired texture is more elastic and gelatin-like, I would move to a low-acyl/high-acyl gellan blend. Low-acyl gellan provides transparency and firmness, while high-acyl gellan adds flexibility and reduces brittleness. This system can be extremely clear when processed correctly.
Agar and iota carrageenan are also plant-based and can be clear, but agar tends to be brittle and prone to syneresis, and iota carrageenan is less forgiving in high-sugar gummy systems. I would treat them as secondary options rather than first-line choices for a fully clear gummy.
Processing changes for true clarity
- Use demineralized or reverse-osmosis water. Calcium and magnesium in tap water can cause pectin or gellan pre-gelation, haze, and graininess.
- Pre-blend the hydrocolloid. Disperse pectin and gellan in a portion of dry sugar or another dry carrier before hydrating to prevent fish eyes and undissolved polymer.
- Hydrate completely before adding acid. Acid should be added late in the cook, just before depositing, because early acid addition can cause pre-gelation and visible haze.
- Control final solids and pH. For a high-methoxyl pectin system, target roughly 72-78°Bx soluble solids and pH 3.2-3.6 for a clean, transparent set.
- Use vacuum deaeration. Remove micro-bubbles after cooking because trapped air scatters light and reads as cloudiness or opacity.
- Switch to starchless molding. Starch powder can leave surface residue that reduces clarity. Silicone, metal, or plastic molds with a thin, clear release agent work better for a fully clear surface.
- Cool gradually and dry minimally. Rapid cooling or over-drying can create surface skin, condensation marks, or internal stress that reduces transparency. A clear polishing step, such as a light plant-based wax or clear oil, can replace starch dusting.
The key is not just choosing the right hydrocolloid, but managing water quality, acid timing, deaeration, and molding conditions. Those processing changes are what separate a slightly hazy vegan gummy from one that is genuinely clear.
