The Gummy Matrix Wants to Misbehave

Gummies are a high-moisture matrix, which creates real tension when you add active ingredients. Unlike tablets or powders, gummies have water activity high enough to support microbial growth if not properly controlled. They often have acidic pH, especially when pectin-based. Heat is used during slurry preparation and depositing. That combination-moisture, acidity, heat, and oxygen-can quietly degrade many ingredients over time.

Several questions have to be answered early, before anyone fires up a depositor:

  • What is the target water activity for the finished gummy?
  • Will the formula rely on humectants, pH, preservatives, or packaging as the main microbial hurdle?
  • Will the base be gelatin, pectin, carrageenan, starch, or a hybrid?
  • Are the active ingredients stable at the required processing temperature and pH?
  • Will the active ingredients stay homogeneous in the slurry or settle during depositing?

Pectin-based pet gummies can be attractive for clean-label and vegetarian owner preferences, but pectin systems are sensitive to pH and soluble solids. Some minerals and botanicals can buffer the pH or interfere with gel formation. Gelatin-based gummies may give dogs the elastic chew they like, but they can melt at elevated shipping temperatures.   • Sanitation: High-moisture, high-sugar environments are friendly to yeast and mold. Animal-derived palatants add another layer of sanitation complexity.
  • Metal detection and inspection: Small, high-moisture gummies can be challenging for metal detection and X-ray systems. Equipment calibration and test pieces need to be appropriate for the product.

The production line has to be designed around the product, not the other way around. That is why pilot batches and scale-up trials matter so much in this category.
